Steel or Stone Surface? Which is better?

In the process of choosing equipment for a new pizza restaurant.  It appears that Bakers Pride Gas ovens are the industry standard for New York style pizza.  They have a steel deck or stone surface option.  Which is correct?

Stone is better hands down. Bakes Pride are good but Marsal and Sons are the best. You need to go to the Pizza Expo in Las Vegas On April 1-3. You will get a lot of good contacts there.
