I went to this pizza place in Carroll Gardens last weekend. I was prepared to be blown away from what I've been hearing. And I was. The owner/pizza maker Mark Iacono has created a great brick oven NY pizza using 3 cheeses: Fresh mozzarella, Buffalo Mozzarella, and Grana Padano. The crust was cooked to perfection. Nice dark spots while still very nice and soft, not dry, inside. Ok, so I sound like an ad for this guy. But, he has inspired me to start making pizza at home. Just ordered my italian yeast from sourdo.com. And, have joined this forum and ready to start piemaking!
Has anyone checked this place out? It hasn't officially opened yet, but has been open since the fall. I think he's planning on having a grand opening soon.
