Are you saying it is part of the prep table? I knew a guy that used to own his own shop. Before he owned his shop he worked at either a Pizza Hut or Dominos. He basically followed their techniques by using a plastic dough case and then putting a metal grill of some sort over it, he then prepped the pizzas on top so that leftover cheese would not be wasted. I don't know if thats what you're thinkin of.
