Pizza Prep tables
« on: February 04, 2007, 03:18:18 PM »
Does anyone know the make and models of pizza prep tables used by either Papa John's or Domino's. I am talking about the ones that they roll the screen pizza over and it slides over a cage that has pans underneath them to catch all the falling product. I am curious because I am looking to open a pizzeria in the future and the only ones I have seen at the restaurant supply house are standard ones with the plastic make boards. Thanks for any help.

Are you saying it is part of the prep table? I knew a guy that used to own his own shop.  Before he owned his shop he worked at either a Pizza Hut or Dominos.  He basically followed their techniques by using a plastic dough case and then putting a metal grill of some sort over it, he then prepped the pizzas on top so that leftover cheese would not be wasted.  I don't know if thats what you're thinkin of.

I have never been behind the counter to see it up close, but it seems to me that it's an inclusive thing. I am used to a traditional NY style pizzeria with a true brand pizza bench. So I was assuming that it was a different type of bench. I must look into it a bit further.
