9" cast iron DD

Here's a pic of the DD I made for the wife last week. She wanted DD, I wanted to try a Neapolitan on the BS. I make DD on a regular basis. It's one of her favorites, while I like to try different styles.

Neapolitans were OK for a first try. Nothing to write home about. Maybe with practice.

Just plain old KAAP, no semolina, or corn meal, 50% water, .8% IDY, 16% corn oil, 5% OO, .5% salt, and .4% sugar.

That looks AMAZING. Do you think it'd be better using a iron skillet rather than a cake pan? Seems like the answer would be yes until you think about 45 minute bakes.

I never really had a lot of luck with cake pans, and I'm too cheap to buy new DD pans. I've had cast iron for quite a while, and like it, plus I have 2 of those 9" pans, so I can bake hers and mine at the same time.

Normally bakes in 30-35 min at 450. I guess, if I wanted to cut off the handles, I could bake it in the BS.
