I haven't checked recently, but my recollection is that Forno Bravo is selling the Caputo Extra Blu 00 flour, which is lower in protein than the Caputo 00 Pizzeria flour as sold (repackaged in small bags) by PennMac. I mention this since some members may not know that there are several Caputo flours used to make pizza dough. In addition to the Extra Blu and Pizzeria flours, there is also a "stronger" Caputo Red 00 flour that some pizza operators use.
