oven help opinions please
« on: March 05, 2007, 10:28:51 AM »
Hello All.   I was looking for a little help from anyone outthere that has "stick" built their own oven,  or knows anything about it.  I just want to make sure that for all the effort I am going to put into it, i will get a satisfactory result.  I have been hanging around on the forno bravo site for a while now, and with spring coming , begun demolishing the chimney you can see on this thread.    http://www.fornobravo.com/forum/f8/looking-opinions-ideas-space-please-comment-1598.html#post8303     . I know the forno bravo site has been around for a long time and consider it an extremely valuable site.  My only real questions have to do with the use of the bricks for the oven floor, instead of the oven tiles "Biscotto" as they are called.  I am assuming this is ok? Also I am planning on the 42" model as described here.   http://www.fornobravo.com/pompeii_oven/pompeii_oven.html.  this is the correct design for the real pizza oven that will attain temps of ~1000 degrees.  there are also designs on that site called naples, or Tuscan , high dome/low dome.  I would take any input I can get on these plans.  Marco if you are out there, You opinions would mean a lot to me on this thread , as would many others.  If I can master the Neapolitan pizza at home, It just may lead to a career change,  because around here all we got is bertuccis,  and thats just not right.  Thanks a lot for your thoughts folks.  -marc
