Got Me Some BAD Harvest King!

I was making some of my usual dough with my usual ingredients this morning.  First batch, almost all of the flour came out of an old bag of Harvest King.  Mixed up like usual.  Nice consistency.  Opened a new bag of HK bought last night, weighed like usual, mixed like usual, and made sticky glop.  I thought I mismeasured, so I started adding flour incrementally in hopes of saving the dough.  I finally got it to firm up, but it felt slack and didn't rise much.  Tried a new batch.  Measured carefully (by weight).  More glop.  The bag had an expiration date of March 08.  Has this ever happened to any of you?  Limp dough can be so humiliating.  :'(

I noticed this flour the other day at my Giant, is it a newer higher quality Gold medal flour?

The brown paper bag looking package was new to me.

Right now I'm in-love with the Harvest King. So far it has improved the quality of the various styles I use, but in general I'm still trying to get familiar with new flour.


I did notice a slight change in the color of the bags of flour, that always makes me nervous. It usually means the contents changed too. So far, so good.


Thanks, I'll definitely keep this in mind.
