Hey everybody,

I just wanted to drop a quick line letting you all know that I am no longer working @ 2Amys. 

The desire to open my own place combined with boredom and certain issues regarding Autonomy and resposibility, the owner and I no longer were able to maintain a good working relationship.   :(

So, as of last Tuesday I am out on my own.  After 6 years I am again looking for work.

I have had many offers here in the DC area, but I am interested in anything that anyone may have to offer anywhere.

If you think you could use my help just send me a PM.

My name is Edan MacQuaid and I have been the Chef/Pizzaiolo @ 2amys for nearly 6 years.

I have been working in restaurants (all positions) for the past 17 years.

Skills include:

Master Pizzaiolo
baking
all positions on conventional hot line
ordering/inventory (I have many contacts among local and national purveyors)
hiring/scheduling
food/labor cost control
menu writing
consulting
etc.

I just typed a really long reply to this and accidentally lost it..

Here is the short version.

I am working at Bebo.  The owner is Roberto Donna.  It is a great restaurant if good authentic Italian is your thing this is the place.. Pizza wise, The oven awaits a flue (dammit! Hurry up Roberto! )  Come in and Ask for me, I will give you the quick tour and talk pizza all you can stand.. but, I cannot bake one for you..

As much as it pains me (really didn't leave on good terms ) I would recommend 2Amys.  My lovely wife (who still works there ) and I invested a LOT of time and LOVE in that place.  It is still the best pizza in town. 

Go to 2Amys, come to Bebo and then next time you are in DC come back to Bebo so  you can see how much better the pizze are when the pizza man is allowed to make REAL pizze.

I've never been to 2 Amys.  I'd love to come to Bebo.  Is it in Crystal City?

It has been a pleasure to read your posts here.  The posts about your success with making a starter inspired me to do the same (although it took me more than a month  of experiments to get a satisfactory result). 

BTW, I visited 2 Amys during a week-long business trip in April.  I liked the pizza so much that I returned two more times during the week.  My last visit did me in.  While trying to grab some quick lunch, I missed my flight from National Airport.  The pizza at 2 Amys was by far the best I ever had in DC (and better than any place in Brazil, where I live).

Coincidentally, I had to stay overnight in a Crystal City hotel to wait for the next flight out.  While walking around, I passed Bebo Trattoria and thought it looked posh.  I look forward to trying your pizza there on my next trip.

I went to Bebo today for my first Neapolitan pie so I had nothing to compare the pizza to besides my own and the pictures I have seen on the site. On a side note When I came in I think I saw Roberto Donna manning the oven. We ordered the Margherita, visually it did not look like other neapolitan pies I have seen on the site. The char on the bottom looked about right but the crust wasn't as airy as what I have seen. There was probably more sauce on the pizza then it could handle because it was abit soaked in the middle. I thought the sauce was very good and no complaints with the mozzarella.  For this being my first Neapolitan pie I was kinda disappointed, I thought it would be so much more.

If you're still in the DC area, try Sette Bello in Clarendon or 2 Amys in Northwest. Both make superb Neapolitan pies.

BTW, Edan is no longer at Bebo.
