We run a campground and currently serve snack-bar type products, hotdogs, pretzels, ice cream, etc., and we're going to add pizza this summer.
I'm looking for information on the best way to do this. I'm inundated with lots of equipment and want to know what I really need to give this a go.
I know I want to serve a good product but since this is a "sideline" we're not going all out to start. I just want to start small and see how it goes. We can always expand. I really don't want to serve pre-made frozen pizzas, but I'm thinking we should go with a pre-made dough.
So.. here's my questions:
What do we need, equipment wise, to get started?
Obviously an oven. Refrigeration and prep surfaces. What about proofing? do you need to do that with the frozen dough?
What are all the little things I would never know to get?
Sorry.. working at a pizza shop for 6 months isn't a possibility for me....
I have worked in restaurants.. about 20 years.. just not pizza.. Anybody wanna help a newby?
