"Baker's & Chef's" high gluten flour from Sams Club.

While shopping at Sam's Club yesterday I noticed they had 50lb bags of flour by a company called "Baker's & Chef's". They had 3 styles: High Gluten, AP, and bread flour. The label on the High Gluten said it was good for Thin crust pizza, bagels, keiser rolls, and hearth breads. I was wondering if any of you have tried this flour as a replacement to the common pizzamaking.com flour favorties like KASL, KABF, GMHK, etc? The 50lb bag was very well priced at $12.13. Seams like a steel if it's decent flour.

I would stay on the safe side and stay away from the bromated flours.

I don't know anything about Bromated flour. Whats the downside to using it?

Bromate is a carcinogen supposedly.
