just check the dates on the top.  My costco usually has 2 or 3 different dates, obviously you want the most recent one.

Jeff In my opinions the highest quality Bufala mozza is the one you make ur self as fresher the better.

I've used the Bubulas Bubalis Mozzarella di Bufula, and found the quality superior to anything I could buy at Whole Foods.  It arrived cold packed, and super fresh.  And it also did not soup up my pies the way some of the Bufula can...nice tangy taste, perfect on a smokey neapolitan style pie.  Highly recommend. (I live in So. Cal, so maybe its short trip makes it a fresher choice?)
