still searching for sbarro's recipe

the family and I ate at sbarros today....  man what I would give for thier recipe... I want to know exactly what they use..... the sauce, dough, and cheese.. I think this is driving me insane!!!!!!!!!!!!!!!!

Very very few of their store employees know either. . .    so you could probably ask and they'll be telling the truth when they tell you they don't know.

It's funny, I have been looking for that recipe for a while and completely forgot that my best friend, of 30 years, spent a whole year working for sbarro's.

But when I finally remembered to ask him, he said the same thing, "I can't remember"
But he did remember that there was Romano in the sauce.
So, if nothing else there is the starting point. Not much help though.
And that was almost 20 yrs ago.

But we can still keep searching Mama M.

 the sauce is not cooked, roma tomatoes, fresh basil, dry oregano, romano cheese??


dough... I am still working on it..
I am doing
1lb hi gluten flour
91/2 oz water
2t sugar
1 3/4 - 2t yeast
2t salt
1T olive oil
-24 hr cold proof

(I get 2 pizzas out of that)

I also want to know what cheese they use, it produces a lot of oil though....

hmm... maybe I should get a part time job for a few weeks.... heh!!

Het Foccaciaman, my Mother would use Romano every once in a while and it added an interesting twist, but she always said to add it after you simmer the sauce, never before, to get the maximum taste and results. I do this and it's very interesting.

I find Sbarro's to be VERY inconsistant from one location to the next.  I honestly don't think I know what the true recipe is!

I still think it is great pizza (mostly) and here's a tip: Go to the dumpster!  They have to throw away the boxes and cans right?

oOOOoOOo but most Sbarros here are in the malls, I am really going to drive myself crazy..

**I have even used my son as an "excuse" saying how he cannot have certain foods (a lie), and I asked the ingredients to the sauce...  they told me some crap that I know is BS. first he goes onions, then I say "are you sure, he cannot have onions", then he says "oh well, um no, onions are not in the pizza sauce"
