So far so good.  I've got the 12 pans with the dough in them on the table.  This will be just a short 4 hr rise, since most of people there wouldn't be able to tell the difference.

Had to make 4 batches of dough, 3 balls each.

OK, Recipe

Thickness Factor .13
100% AP Flour
50%  Water
20% Corn Oil
1.5% Yeast
1.5% Salt

In the mixer bowl add

water
oil
flour
yeast
salt

Mix on Speed two until it has come together as a dough

Dump and knead dough out any "dry" spots.  If making for more then one pizza cut and weigh now.

Coat with olive oil, cover with plastic wrap and towel.

Let sit 4 hours

Put olive oil in bottom of pan, add dough, pat out and pull 1/2 way up the side.

Cheese,
Top,
Sauce

Cook in an over that has been preheated to 450o F for 25 minutes.

DKM, you didn't indicate how much or what proportion of what kind of oil in your recipe above.  The pizzas looked great, though.  You probably need some "time off" to rest after that job.  Nice work.

I had one that got a little more "done" than I would have liked, but it still wasn't bad.  Honestly I was quite suprised things went as well as they did.  I can say that I would do it again.
