Mushroom season again!

Last year about this time I posted about using mushrooms I had collected on pizzas.

This year promises to be an even better year due to the good rains we have been blessed with this year. Here is the first batch I collected yesterday which I intend to  sauté very lightly and use to top some white pizzas for lunch today. I'll try to take some photos of the finished pies.

Good judgement comes from experience. Experience comes from bad judgement.

The French are mad about mushrooms. Every pharmacist has studied mycology, so that you can take any questionable mushrooms to the local drugstore for an expert opinion.

I remember an August Sunday that I spent with a French family at their country house in the Dordogne. After lunch (on a stone table under a hazelnut tree where we ate nuts from the previous year) we went mushroom gathering in the afternoon. That night's supper was an omlette made from the just gathered mushrooms. Unforgetable.
