I have a kitchen aid 325 watt mixer and I mix my dough on the lowest setting. [I think there are 10 settings, but when using the dough hook I keep it on the lowest, the setting under "2" which is something like mix or stir??]
Anyway, is this enough to work with my high gluten four. Do I need a more powerful mixer or use a higher setting? I typically do a 5 minute mix, rest 5 minutes, then 5 more minutes mix.
I typically use under 1.5 lbs of flour with about (60%) 4/5 lb of water.
