Jeff Varasano's mixing times . . .

Hi all,

Looking at Jeff's spreadsheet (http://slice.seriouseats.com/jvpizza/Dough/PizzaRecipe.xls), the recipees he lists on the bottom half have numbers in the 'mix/rest' column. My question is, how do those numbers break down? What do they mean? I'v got the first couple down, but then I get confused. Thanks for any help you can provide.
