Yep.  The most important thing I've learned about a WFO is to take it out before it looks done.  Charring or "flavor freckles" are fine and coveted.  But if it's left in a few seconds too long, you have a tough hard crust.  Inside a Wood Fired Oven is where Physics shakes hands with Art; and Timing is the Arbiter.

Thanks for the great pics, Mario. Your pies look outstanding. And I agree, your bottoms have some "good burn"! You WFO guys are the luckiest--Caputo at it's best, and that wonderful char--SIGH.... I leave this thread with WFO envy, I'll tell ya...
