Cleaning Out the Cheesebox - Interesting Combination

Every few weeks I use whatever cheese looks like it is growing legs and ready to escape. Today's batch of almost ready-to-be-trashed cheeses included an imported Oaxacan and a French Comte. I was really surprised how well these combined on top of a Pizza Lolita with oyster mushrooms and truffle oil. Definitely something to try again.

some of the best I've made were made with leftovers.  It's good to see I'm not the only one.
