Design a deep dish menu

I'm desiging a menu for my first Chicago Pizza restaurant. I've followed DKM' recipe for a long time and the dough turned out great, and luckily I also have a 'secret recipe' for my sauce too :P almost perfect  :-D :-D I'm outside US and Chicago deep dish is quite unfamiliar here. so i'm trying to develope a very simple menu . Any suggestions please, what kind of topping is a 'must-have' ??? ??? I'm thinking of peperoni, italian sausage....

Chicken sausage, turkey sausage, maybe a gluten free option of crust, and then then usual. Onions, green peppers, pepperoni, etc.

tofurkey!!!  got to have a tofurkey option!!!!  mmmmmm.......nothing says chicago deep dish like tofurkey!!!!!!

ok. i admit it. I've never tried tofurkey.  Much less on a pizza. i was being silly.....
