Hi - I am new to the forums and to pizza making, but I have learned a TON from all of you on the site. I saw on Grande Cheese's website that they offer an "East Coast Blend".
According to Grande "This blend is a mix of 50% Whole Milk and 50% Part Skim Mozzarella that provides the unique flavor customers love, with no oiling off. With East Coast blend, you'll spend less time dicing and shredding cheese and have more time to build customer relationships. "
I'm not worried about customer relationships, but they are marketing this as if it's what's being used by NYC pizzerias, and it's being sold in 5 pound packs either diced or shredded.
