It's Friday !

Well I'm just sitting here, just cracked my first homebrew and was thinking of you guys  ;D

I have the pizza dough rising in the Kitchen Aid bowl and thought I would check in and see what's happening .

I hope one day the software will allow us to get emails for any *new* post that we are not even involved in.... that would be super.  I just joined a beer group the other day and in the prefs you can checkmark that option off ! and bingo, you get new emails with the entire message in your email - great stuff !

Anyway, I hope to have a great pizza tonight and jus wanted to
wish everyone a great weekend !

I think I will give the thin crust a new test.  I've killed way to many brain cells in the past to drink a cold one.

I've got a deep dish dough in the fridge and a "pizza inn" thin style on the counter.  Honestly my last one sucked.  I'm not sure what mistake I made, but I made one so I'm trying again.

Unfortunately I was not home to make my own on Friday night, but did enjoy a rather different pizza while my wife and I spent the night away from the kids.
It was Green Mill Pizza , the type Il Primo Pizza
Thin crust
italian sausage
peperonni
Black Olives
and a four cheese blend of Mozz, Prov, Parm, and Gorganzola..
It was quite good actually I just reheated some of the leftovers on my stone and it was equally delicious.
I think I likely play with this combination of toppings once again It was a good mix.
I went the meal not expecting too much, for the last time I was there I had tried their Chicago Deep Dish Special.  And while the toppings were good and the sauce wonderful it did not overcome the crust. It was lacking in many ways. Taste being the most obvious. It was almost as if they had designed the crust with a sole purpose to merely transtport the toppings and hold them during the cooking. I could not imagine that they would actually serve this corrugated cardboard/leathery thing.

The difference between the two pizzas i had had were like night and day.
Interesting none the less..... :)

I think I figured out the Sicilian Style for us Randy!!!!
I made a Focaccia for the first time yesterday. Potato/rosemary.
The recipe I used was from the American Pie book.
It is a rather wet dough.
I didnt let it ferment overnite, which I am sure would work excellent too. I did however CHEAT in the fermentation department and use some of my sourdough starter(@1Tblsp) and let it site out all day to double in size.
Three hours before cooking, I transfered the dough to a 9 X 17 pan to rise again. (I need a deeper pan thhough, the dough kinda went over the edges a little in some spots).

The end product was great.  Ate it with a brisket that cooked all day,  putting the meat on top of the focaccia and gravy. What a combination.

Anyways, the dough reminded me of Buddys Pizza in the Detroit area. Thick and rich. Gotta try this witha deeper pan so I can load on the cheese, and toppings. The pan needs to be deep enough to hold the risen dough, and the cheeze edges to carmalize when cooked.

When I do it, I will post my results.

In other news, Ivan is still a huge factor in my area.

I will take a look at that recipe and give it a try.  My Sister works for the state insurance and she said how bad it still is.  Glad you can make pizza and a Brisket.

Just picked up my deeper pans. Made the same dough last night and let it ferment. Going to try a pizza topping focaccia tonight.
As always, I will post the results. Gotta pile on the cheese so it goes to the edges.
Any thoughts on the order of toppings?
Cheese first? Meats first?

What a weekend  :-\

Had not been that sick in over 4 years.  Poor wife had a sick husband, 6 YO and 4 YO.

No pizza made  :'(

Oh well maybe I can rebond this week.
