sauce amount

what would be a good amount of sauce for an 18" ny style pizza ? i was thinking about 4 oz

The answer to your question is a subjective one since it depends on matters of personal preference or the preferences of customers to whom the pizzas are to be sold. Even professional pizza operators don’t agree on the amounts of sauce to use on their pizzas.
