what can I do with my dough recipe to fix it

I have been working on finding either a new recipe or try to fix what our restaraunt is currently using. So if any one is interested in helping me, I would be glad to share what my recipe consist of. My problem though it stays active over proofs, in dough ball stage and bye morning we have Frisbee's.
