It seems like from what I've observed on previous back engineering of commercial pizzas is that folks start with nutrition information. I would bet the farm that Hungry Howie's has this listed on their website (in fact I just checked and they do - in pdf format). That might be a good starting point.
You can also try calling and asking just for a list of ingredients. IF they give you the runaround, try saying something you may have an intolerance to high-gluten breads and you just want to be sure of what ingredients they use. Regardless, they won't give you the amounts, but that can all be worked out through trial and error.
