..a new GE oven ..if i run it for an hour it tops out close to 600 ..i have a really nice Fibrament-D stone (19" round) which fits just right in a newer model oven ..i'm not gonna trip my oven out in clean mode like Jeff Varasano does to reach 800 something degrees ..i'm not that courageous =)

A great looking pie - perfect browning IMO .
Was curious how many minutes @ 600 do you typically bake your pies ?
I'm going to try your crust recipe this weekend hopefully.

Thanks alot for the kind words Zeke ..the small 12" pies cook up pretty fast ...5-7 minutes ..i like a well done pie ..so i always try to be patient ...good luck with the recipe ..remember to sift your flour and do a wet kneed if you can ...let me know =) craig
