A great pizza sauce especially for deep pan.

Hi all,

I have been making pizza's for ages and have just joined this forum so I thought I would share my pizza sauce with you, it is ideal for Chicago style pizza.

Enough for one pizza

1 tin of chopped tomatoes
2 teaspoons of oil
salt to taste
1 teaspoon of mixed italian herbs
1 teaspoon of oregano
3 cloves of garlic (or how you like it)
1 large dash of worcster sauce
1 large dash of tobasco sauce (can be left out)
2 tablespoons of ketchup
1 knob of butter

Instuctions

Fry garlic for 30 secs, add tomatoes and heat.  Add herbs worcster sauce, tobasco sauce and ketchup and stir in.  Add salt to taste.  Reduce for 20 to 30 mins till the sauce is thick and strong.  When the sauce is ready add a knob of butter to richen up and shine the sauce, allow to cool.

This sauce can be frozen for upto 6 months.

Welcome to the forum Mark.

Thanks for the recipe.  Chopped tomatoes?  I'm assuming you're talking either ground or crushed, not diced, right?  It looks good but I think I'd dial back all that garlic, and I like garlic.  I've never thought about worcestershire sauce but I bet that's probably a pretty nice little flavor enhancement.  Anybody else try worcestershire sauce in their pizza sauce in any amount?

Over here in England we have tins of chopped tomatoes, they are skinned and chopped and its quite a chuncky sauce, as for the garlic I got mixed up, 3 cloves of garlic is for sauce enough for 2 pizzas which I am making at the minute, so its more like 1.5 per pizza.
