...i'm using a newer GE oven to bake my pies ..it tops off close to 600 degrees if run for over an hour ..thats good enough heat for me ..i use a very nice Fibrament-D artisan bread making stone (19" round) ..positioned on the lowest level of the oven ..the screen with the holes is American Metal Craft's "Mega" pizza screen ..i like to bake on the screen 3/4 of the way ..and when the pie is ready to slide off ..i finish baking right on the stone for a final minute or two ..i prefer a well done pizza
