Many years ago, before the Caputo 00 flours became more readily available in the U.S., I tried the DelVerde 00 flour. However, I couldn't make heads or tails out of the data on the label (I was trying mainly to determine its protein content), so I just fumbled around with the flour as best I could until the other brands of 00 flour, including the Caputo flours, became available. I understand that at one time, Dom DeMarco used the Delverde 00 flour at DiFara's. If true, he apparently found a way to make it work for his purposes.
