Found a recipe for deep dish

I don't recall this ever being posted or discussed before but thought it was interesting.  It's from Pizza Today  http://pizzatoday.com/production_articles.shtml?article=MjYwNnN1cGVyMjYwM3NlY3JldDI2MTA=

I converted the recipe to baker's percents as

100% flour
38 water
16 veg oil
1.5 sugar
1 salt
.75 ADY
.75 eggshade coloring (optional, of course)

26 oz. dough ball for 14" pie.  That's a thickness factor of about .1245.


That's a pretty low hydration but maybe something worth trying down the road...or this weekend if I've got time.  They also give some exteded knead times for the prep that we don't usually adhere to.

I should've known buzz was on it.  ;D

Going back to '05, it's no wonder I don't remember seeing it.  I'll climb back into my hole now.  :-[

Loo,

buzz has tended to be critical of Pat Bruno's work with deep-dish. That may account for why you don't see much on Bruno on the forum. My view is that it may be worth giving the Bruno recipe a try. Who knows, you might like it?

Loo, back then everyone was guessing and still battling that Frugel recipe.  If you go back to the old forum that it was originally posted, you will find arguments there as well.  It wasn't long after this recipe came out that DKM. published his the Buzz came up with the short knead time. 
Me, I rode this horse the whole way. LOL  I do greatly appreciate all of y'all's work.

Loo, that's a pretty interesting formulation for a deep dish pizza.  The hydration seems low for a Chicago style, but I wonder how it would work.  Looking forward to hearing about it if anyone tries it out.

I don't have much time to breath any more.  I still keep an eye on the site and make pizza from time to time (but tonight I'm putting a brisket in the smoker) but I don't have time to get into the nitty gritty of posting at this point in my life.
