JMO, I have tried numerous pizza recipes on here and have to say. The last one i tried was Jeff's and IMO it is by far the best I have made. Also have to agree about Johnny's in Mt Vernon, I lived in YONKERS a town 6-7 miles from there and drove out of the way for his pies, in spite of having good pizza on every corner in Yonkers. However just to long to drive there now as i have been in Phoenix 35 years, But every time I go back Johnny's is on the list. You might ask about Biancos here, well i havent been there as I wont wait 3-4 hours on line to eat anything or see anybody,

I agree that Jeff's recipes are excellent, but it is his techniques that make his reverse engineering great.  I found that for my normal oven temperature for baking pies (450-550) is much too low for his high water content so I add less water, but I've also had my oven up to 600-700 with great results using his recipes.
