Sorry :-[, I'm still a bit confused by this. In regards to using the Deep Dish Calculator; if I want to use 10% semolina, do I leave out the semolina on the calculator & figure the 10% myself making the flour 90%? Otherwise, if I plug the 10% semolina into the calculator it skews the other figures; is that correct?
