Encyclopizza 3 Grain Pizza

Last night I made a pizza with this as my inspiration http://www.correllconcepts.com/Encyclopizza/05_Dough-making/12_dough_recipe.htm
For the 30% grain mix I used oats, cornmeal & semolina. It was quite good. I've also done it using oats, cornmeal & rye. That was good, too. Both times I left out the egg. Anyone else ever try this? Any suggestions to improve upon it?
