Bulk Dough Recipe

I see alot of good recipes for small batches of dough.Can anybody point me in the direction of a good bulk recipe use Caputo Pizzeria 00 and ady yeast? It will be 12 - 13" and done in a wood fired oven.Thanks!

Most of them are in bakers percentages, so can be scaled up to whatever you want..
