Italian Sourdough culture recipe booklet

Wondering if anyone else has tried the recipes in Ed Wood's instruction book that came with the sourdough cultures?

I made the Pane Cafone which came out ok.

I tried the Ciabatta which failed. I contacted Ed via email and told him I thought he left out a final proofing step. He confirmed that I was the only one to notify him of that, and yes I was correct.

Has anyone tried the Pane di Padula? Would like to make some and hoped to find out any errors before I start this one.

Hi,

I did not see the final revised version which apparently get sent out nowadays, but on the old one I would add more water to the recipes provided if using American Bread flours as the recipes were devised (for home use) with Italian 00 flours.
