Tried some new cheeses today. Here is one with both smoked and marinated mozzarella. A different taste for us, but really delicious with sausage and salami.

Once again that looks great, an inspiration. I have used the Calabro smoked mozz and really enjoy it, the rest of the family can do without it. I also get the spicy marinated mozz from Trader Joes and it is my favorite cheese for high heat baking. The olive oil seems to take the place of the usual water in the cheese and allows it to melt nicely.

I guess I know what is for dinner tonight!

I love smoked mozzarella.

Try it 50/50 or more depending on your taste next time you make a baked pasta dish, or add it to wild mushrooms in a great ravioli filling w/ brown butter sauce.
Back to being a civilian pizza maker only.

I used to sell the Calabro marinated (spicy) and smoked mozz in my deli... both were great hits with the customers when we sampled them out!  Never thought at the time to suggest putting them on a pizza!  Guess I'd better get some for a pizza... soon!  Thanks for the idea, Bill!
