potassium bromate question

Hey i was looking over some of the flours at the store and was wondering if potassium bromate would be listed as an ingredient also how do i know if the flour is unbleached. It would be rare to find a flour product at the retail store level that is bromated. Bleached, yes, but not bromated. And if the flour is bleached, the label information will so specify. As for Hodgson Mill, they are known for having "pure" flour products, with no bromates or bleaching agents. In fact, some of their flours do not even have barley malt or the standard enrichment packages (iron/vitamins).

The flour product you mentioned is for making pasta. Is that what you would use it for? The only Hodgson Mill flour products that I have seen at the retail level that could be used to make pizza dough are the whole wheat flour and white all-purpose flour.

Thanks for the reply Peter, and yes i was planning on using it for some fettucini, would i be able to use it for my peel as well to reduce sticking or should i stick to regular semolina?

You could use the pasta flour for use on a pizza peel but I thick that you find cheaper alternatives, such as plain semolina flour or rice flour.
