cheese for NY style pizza or for a PJ's clone pizza

Any reccomendations for cheese for a NY Style Pizza.  I've heard dry brick mozz is standard but am open to other suggestions.  I'm checking out Grande's varieties.  They say the whole milk mozz is the best-seller but I've had some bad results with whole milk mozz in the past--it seems to clump into a big hunk of cheese.  My best results have come with part-skim mozz.  I know some people use a 50/50 blend.  What does Papa Johns, Dominos use?  What about real NY pizzerias?  I know some use wet mozz but that's not the kind of pizza I'm going for right now.  Also, some say they use Grande Pro-nello provolone blend?  Would you entertain the idea of using provolone on a pizza?

For a description of the mozzarella cheese blend used by Papa John's, see Reply 4 at http://www.pizzamaking.com/forum/index.php/topic,6758.msg58199.html#msg58199. As noted there after the description itself, the vendor of the cheeses used by PJ's is Leprino Foods, which supplies pizza cheeses to the three big chains (and many smaller ones also). There is additional discussion of Leprino and its cheeses at Reply 9 at http://www.pizzamaking.com/forum/index.php/topic,6758.msg58413.html#msg58413. At Reply 26 at http://www.pizzamaking.com/forum/index.php/topic,6749.msg58171.html#msg58171, member November indicated that his analysis of PJ's nutrition information suggests that a 2/3 whole milk mozzarella cheese and a 1/3 low-moisture part-skim mozzarella cheese blend would match the characteristics of the cheese according to the Papa John's nutrition information.

As you will see from the Product Ingredients list at http://www.dominos.com/home/menu/ingredients.jsp, Domino's uses a similar cheese blend as PJ's uses. Leprino mentions in its own documents that it is a supplier to Domino's.

Occasionally, it is possible to find Leprino cheeses at a foodservice company or distributor, but the Leprino cheeses are not usually sold to individuals.
