well iam posting a pic of one of the pizzas i made on Saturday..
this was 62% Hydration
1 gram of IDY
40 grams of starter
2% sea salt
6 hour bulk rise, and 3 hour individual rise.....

this is still not my oven... tomorrow a mason will start mine... ill post pics !!
