I have chatted in here a few times about Nick's in Costa Mesa. This has to be the best pizza in all of southern california if not the entire state (in my honest but slightly biased opinion) ;)

A few notes about this place:
The crust is a bit thick... It has a bit of a sourdough taste and intense flavor, so much that the crust has actual flavor to it, the outside is crisp and charred nicely while the inside is always very moist.

The sauce is almost non-existant so i always order "extra" sauce as you can see in my pics... The sauce has a great mild taste.

The pepperoni, i havent figured out the brand yet but it is amazing, tastes like one of those hickory farms stores when you walk inside.
The cheese is Grande, they have a sign on the counter that says "taste the difference, we only use grande cheese". Its hard to even find a pizza place around that even knows what grande is.

actually here is their oven...
i dont know what it is but it chars it up nice, i didnt take a pic of the bottom but it has a nice char to it.. streaks/spots of black.

Looks like a Rotoflex oven.

Anyone who has been here before knows the crust is thick!... the sauce is sparce and the cheese is piled on. It's a bit different than nyc style...

so for the hell of it tonight i asked if they could make thin crust... asked for extra sauce and light cheese. It ended up being the perfect amount of everything and reminded me of grimaldi's. Check out this pic, cupped pepperoni, etc. The only thing missing is the char but the bottom at nick's is charred pretty good for a gas oven. Grande cheese, amazing fresh sauce placed on top... OMG.
