this guy is one of the champions for one of the competitions... i cant remember which.. but he is from napule in tokyo.

i did a check again.. its the world pizza cup.. he is currently considered the best neapolitan pizza expert in japan.. but they have been accounts that the pizzas in napule lack the amazing touch, althou it remains to be top 3 in japanese food seach engines...its abit commercialised. i am going to try it out when im there in january.

I have watched this video a few times now. The guy has really good techniques. In particular, I am impressed by the way he flattens the dough and then stretches it so quickly to the required size. I'd love to learn that stretching technique, but the video is a bit too blurry to see what exactly happens (and because he is so fast too).

Does anybody now of a tutorial or description that outlines this stretching technique?
