a few questions:
1. from the looks of the one picture, how do you prevent ash/dirt/etc from embedding in the crust? or is this part of the old world charm?t
2. does any dirt/soot fall on top of the pizza? none at all? an imperceptible amount?
3. with a large wood or coal fired oven, does the heat propagate evenly throughout the oven or would it be cooler the farther you move away from the fire?
