Thanks for the good ideas guys. I also just emailed Grande and asked for storage tips. I will share the response.

My family run rate of mozzarella is about two lbs a week not counting pizza usage (probably another 2lbs/week). My family loves Polly-O mozzarella sticks (a current pkg in the fridge has an expiration of April '05) so it shouldn't take long to use up my supply should we use it for snacks.
