I read Randys PJs recipe and he said to put the mixer on kneed, What speed is this (RPM?) I just rebuilt a Kitchenaid 4K5SS. I got stir and speeds 2,4,6,8,10. Maybe back then they didn't need a Kneed. If someone knows the RPM for the kneed speed that would be the most helpful. While setting the control plate adjustment I got the stir set at 60 rpm and speed #10 going at 180 rpm. like the book said. However I don't have a speed 2 . If anyone knows about these adjustments and what I have done wrong I would appreciate some help. I have a feeling kneed = speed 2.
