Cheese Seperating?

So the cheese that I use starts to seperate and the grease comes out of it. Is this due to the heat of my oven?

Cheese: 2/3 Sargento Whole Milk /// 1/3 Mild Provolone.

Pizza baked at 550 degrees.

Any ideas?
