Jeff,
Full report to follow. I could not decide. Sooo. I just made the DKM Thin and cracker and the Pizza Hut Pan from the forum recipe. This cracker dough is wild! as mentioned looks like a pizza brain. says 9 hr room rise but doing 1 hr then fridge for day. No  mention of par bake? I plan do do 1 in cutter pan ( only have 1) and 1 on screen. will report  The pan pizza says to put  in 14 " pan spread to 12" and leave in oiled pan. May split and go 3 days on 1/2 the batch to develop. also no mention of oil on top of dough or par bake? Not sure sauce recipe or cheese quantity per pie but I will post these ? I have a day or 2
any help any one  DKM?
Thanks John

Art,

After a few glasses of spiced wine, I asked myself the same thing:
