New 19" stone

I got my new stone today. It's a 19" Fibrament.  I thought I might have to grind a tiny bit off from it to make it fit but it fits just fine.    The stone on top is my 16" that I've been using for about a year.

How big is your oven?

It's just a hair over 19" deep and about 24" wide.  The stone is actually about 18 7/8" diameter.

Nice looking Fibrament. I have often wondered about the uniformity of its heating. Any results you can share at this point? I would be interested in if it heats up quicker and produces a more uniform bake than tiles or a stone.

I have made 2 pizzas on it so far but I didn't take any pictures.  They were pretty good though.

I'm not sure if it heats up quicker or not, but it seems to give a slightly better char than the 16 inch did. I like to preheat my oven for at least 2 hours so I know it's as hot as possible.

I plan on getting an infrared thermometer soon and I'll do some experimenting. 

More than likely I'll be making a pizza here in a few hours and I'll take pics this time.  I'm not sure how it'll look though cause it'll be my first time using fresh mozzarella.

From your photographs I would say the bake was pretty uniform. How much was a 19" Fibrament?

The oven was at about 580 when I put it in.  Since it was the first time I had tried using fresh mozzarella I only used it on half, the other half had Grande 50/50 blend on it.  I could have used more of the fresh too.  Next time the whole thing will have fresh on it, it was awesome.  Too bad I'm paying $6.58/lb. for it.
