American Flatbread's Mexican Pizza

After my forth trip to American Flatbread,

I decided I had to replicate their Mexican style pizza.

I used a typical Neapolitan 00 dough baked around two minutes in a 2Stone oven.

The sauce;
One small onion sliced and browned, add a can of Muir Glen fire roasted whole tomatoes lightly crushed by hand with about half the juice removed. I added one Habanero chili sliced in half and seeded. Simmer sauce for about 15 min. and remove the chili halves. Salt to taste.

American flatbread uses Jalapenos in their sauce and I might try them next time.
So many chilies, so little time.

Topped with Oaxaca and Anejo cheese but feel free to use Mozzarella and Parmesan as Flatbread does. Sprinkled with corn kernels and black beans. The slice pictured also had some precooked and drained Mexican Chorizo which is not used at Flatbread.

The pizza was delicious and was very similar to Flatbreads.
