pizza dough for desert use
« on: January 24, 2005, 12:45:47 AM »
has anyone tried using dough for deserts?

There used to be a italian food/pizza restaraunt near here that disappeared but had the best damn deserts ever called zeppoles. This guy didnt use separate dough recipe for the zeppole like most recipes call for...

he just cut his pizza dough into small balls, deep fried them.. covered them in powedered sugar and put them in a basket with wax paper.

damn they were freakin good.

if you have any good recipes or have tried anything with dough... post them here : D

I fry and sugar my pizza dough if I have some left over. It's great. Just dunk it in hot olive oil and sugar it quick when it comes out and it's awesome

I've made a few dessert pizzas - my favorite one involves roasted apples, cranberries and walnuts on top of Mascarpone cheese! It's amazing.

Here's the recipe and some pics: http://www.pizzamaniac.com/index.php/archives/2004/05/10/almond-roasted-apple-pizza/

When I worked at pizza hut we made very basic dessert pies for the buffet table. They were basically thin pizzas topped with a layer of pie filling (cherry or apple) then brown sugar Streuse (crumbs of flour, sugar and water) and a drizzel of glaze (confectioners sugar and water). They are decent and fast to throw together.

I had camp fire pies this summer which involved sliced peaches, cinnamon sugar, and marshmallows melted between bread slices and it was amazing! My next dessert pizza is going to involve that combination somehow!

Some of these ideas for fried sugar dough balls sound good too. Maybe I'll try that with my next batch of overproofed dough. Mmmm.

with the help of this board and learning to deep fry pizza dough at home, i have re-created the zeppoles from Vinnies Pizza (local defunct joint)... FREAKIN AWESOME.

put reeses peanut butter cup chunks and chocolate chips in a few too.. (others were just powdered sugar, or cinnamon & sugar)OH my god dude... soooo good.

thanks to my wife for pullin out the burger & fry baskets and wax paper to re-create the vinnies feel :D
enjoy

For several years I worked for a pizza place in WA State. We had this awesome dessert the owner called apple eights. All we did was take pizza dough ...put apple pie filling on half, of the round dough and and fold over the other half... kinda like a calzone. Topped it with some cinn. and sugar... YUMMY! We served it with this powdered sugar and carmel syrup dipping sauce.... Dear God it was unbelieveable. I now live in Colorado, but every time I get back to Spokane, I always make it a point to get some Apple eights from there.

:Phttp:// We make our own pizza dough usually, but frozen works just as well.  Let the dough rise as usual, tear 1 inch balls and drop into hot oil in pot (375 degrees or thereabouts).  Do not put too many in at once (usually 5 or 6 for medium size pot).  You can use a wooden spoon to tip the balls over to the other side to get golden on both sides.  When done, drain on paper towel.

In a separate pot, boil 1 cup of water and 1 cup of sugar and reduce to syrup.  When ready, toss your "balls" in the syrup quickly and stack on a platter.... MMMMMMMMMmmmmmmmmmmmmmm

Wow, those pictures look awesome, surely I have to try to make these things because I'll open up a pizzeria and to start I'm just going to sell cinnamon sticks as the only dessert but I wanna try making more desserts using pizza dough. Thanks for the inspiration! :)
