DLX 2000 ... made by Electolux - wow !

Ok I'm impressed, this machine... the DLX 2000 that Jeff owns can mix a whopping 20 cups... yes 20 CUPS of flour.
I have a Kitchen Aid, and it doesn't come close to that....

This babay is a pretty penny though, I only paid about $300 for my Kitchen Aid at the time I bought it ( about 8 years ago ) ... even now you
can still buy them about that price at Costco.

The DLX I'm sure is not even available in Canada, and if it is, the price will surely be around the $799 or $899 price range.

Anyway I've love to see this machine in action.... it looks impressive.  Perhaps Jeff you could put your digi-cam in video mode and shoot a short
30 second video of this thing in action - that would be very very appreciated by more than Just me I'm sure.

argh, I was hoping no one would post about this   It's so beautiful, and I'm so annoyed that I recently bought a huge expensive mixer that looks nowhere near as good as this one!   I'm wondering now if I should try to sell mine on eBay and buy the DLX.  I think my wife might think I've flipped once and for all...I can just see THAT conversation.  "You want to sell this 800 watt Delonghi mixer you bought for $500 from the US, for WHAT reason now??"  "Well, you see, this DLX can mix 20 cups of flour, and the Delonghi can only mix 9."

The DLX is actually kind of ugly if you ask me. The Kitchen aid is very pretty.

However, functionally, there is no comparison.  I whipped out 7 pies in a batch without working a sweat on it and I bet I could have done all 14, I just didn't want to risk it because I didn't have time for a screwup.

But more important, the feel of the dough is so much better.

Having said that though, I have learned some things about mixing dough in general from joining that Yahoo group and playing with the DLX. I wonder if I went back to the Kitchen Aid, if it would be a huge improvement just based on technique, and not the machine. Someone should try it out and report back. Basically, I never used to put in the rest periods and work the dough while it was half batter/half dough state, until very recently.  I'm feeling like these things may be huge factors. So before anyone goes and springs for the DLX, let's resolve this part.  I don't want to cost you guys a fortune.

Just the capacity alone makes the DLX more attractive than the KitchenAid or the Delonghi that I have.  If I put in 9 cups of flour, I'm pushing the spec limits of the machine...I've already had the motor fail once doing that.  You're saying the DLX can mix 20 cups, no problem?  I'm in awe

Thanks for the info.  A good price you paid for your DLX.  yeah, the KitchenAid looks nicer, but boy that DLX is very deceiving.....
I was looking at it and wonder where the power is coming from.... the base is not big at all.... vs motor area of the Kitchen Aid....
what's in there ? a nuclear powered motor ? haha, but really I guess the whole motor is in the bottom eh ?

If you ever just pull the DLX out, try doing a video, even with nothing in it, just so I can see how it works.... it is very interesting
I'll say, and I'm up to buying one in the future.  I just cannot get over the power rating .... amazing.

Cleaning lady eh.... I have a buddy in Nevada, and he has a cleaning lady once a week that comes over, I get a hoot because the morning she's
coming over, he's cleaning up !! ..... he says "gotta clean up, the cleaning lady is coming " hehehe

that before I take it as the truth, the DLX does look larger, but I don't know, 20 cups is a lot, and I'd never push the machin like that anywa,

I yell at my mom for cleaning before the cleaning lady comes over. One year I wanted to buy her a years worth of cleaning lady services for Xmas.  She declined saying it was too much work for her.... there's no arguing with that logic.

The DLX is much larger that the KA. I'll take a photo side by side and post later. 

I don't measure in cups, but I measure the final dough in grams.  I produced 3300g of dough in the DLX once. My best batches, which were my last 2, were 2000g each. It did not break a sweat and I feel the whole 4000g might be doable. The KA strained at 1100g.

In any case, 2000g is 7 pizzas because they come out so light that you only need 270g for a nice 13" pie.  The real beauty is that you hardly have to touch it. With the KA, it sticks to the hook and you have to pull it off and struggle, yada, yada.  But, to be fair, that was before I understood some of the resting and wetter mixing techniques. So you might improve your KA output if you followed those ideas.  The KA could probably do 1500g if the dough was more battery most of the mixing time, until the end when the additional flour final and gradually firms it up.

Btw, I love the fact you work in grams, as an American I'm surprised you do.  Canada switched over to the metric system a long time
ago and it just makes such more sense.

1 pound = 454 grams.... hehe, now that's funny. 

1 kilo = 2.2 lbs.... we grew up learning those at school.  Funny thing, I use metric for outside temps in the winter, but hey
80 degrees F still tells me it's HOT outside.... I like using degrees F for hot weather.

Why is metric so much better ? ... because you muliply by 10s..... I guess if you think about it,  it's only the general public in the States that uses lbs etc... as ALL things medical, scientific, etc in the States are indeed done in metric... anyway I love it :-)

1 oz ? .... 28.3 grams :-)  but we Canadians round it off to 30 grams... I'm a home brewer, so when I see a recipe that says 1 oz of hops I just quickly round it to 30 grams and I'm on my way.

Ah super stuff ! ..... this looks amazing !, thanks for doing the video, I really appreciate that.  It's amazing how just one video can take the place of a thousand images.... it's pretty amazing......, it just comes to life... it was like I was standing there !  The next time you are actually doing a dough
maybe you can honor us with another video with the dough in there and working.... that would be awesome.

Geez, that machine is BIGGER in real life than on website images ! .... yeah the bowl makes the Kitchen Aid bowl look pretty small !
Just from the sound of your DLX, I can hear the gearing in there, it sounds like the gearing in there make it have a ton of torque !..... it sounds like that .... yeah nice nice nice ! I want one now !

Hey Guys,

This whole week of emailing about pizza reminds me of the time I learned to play the piano during finals week my freshman year of college.  I do this sometimes.  When I have a big deadline I find some other hobby to help me procrastinate.  Simultaneously to writing emails 24/7 about pizza, I'm trying to start a multi-million dollar business....

So I'm going to do the right thing and stop emailing for a while. I will send Steve the culture at the end of next week after my big presentation is over. I might make a pie then too because the lovely Marianna is coming to visit and I'll be taking a break anyway then. I'll make an mpg if I do.

I have recently bought a Wolfgang puck Stand mixer from Sam's Club. It is 700 watts. Have had no problems with it bogging down yet. Have used a pound of flour no problem and the cost was only 180.00. I am new to the stand up mixers so I can't compare it to any other one. But after many years of kneeding by hand I am happy to have it.
