I apologize in advance to all the WFO purists I'm about to offend.
I am pondering the idea of building a Pompeii type wood fired oven and modifying it to include gas burners to heat with propane instead of wood. I like the idea of using a WFO because my kitchen oven leaves much to be desired but the reality of maintaining wood, firing, and cleaning it puts me off, I like the idea of gas much better. Think of it as more of a homebuilt deck oven than a WFO.
A quick check of the web tells me propane can burn hotter than hardwood but obviously I would lose all the heat generating coals.
My first thought is to put the burners at deck level but I really am just guessing.
I have read that gas heat has more moisture than wood but if the same temperature can be achieved and the pizza is only in the oven for a few minutes will that really matter?
Any thoughts?
